Fontinella melts beautifully in sauces and casseroles, and is superb in grilled sandwiches. In fact, the name comes from the Italian word “fondere”, which means melt. Today, many chefs use Fontinella as a zesty, change-of-pace flavor on pizza.

Made from pasteurized cow's milk, aged for two months.

HUSBAND ADDICTED TO FONTINELLA. OUR FAVORITE HORS D'OEUVRE IS CRISP CRACKERS WITH CHEESE MICROWAVED TILL JUST MELTED. GREAT PLAIN OR IN SALADS, SHREDDED ON EGGS,PASTA,VEGETABLES ETC..TASTE IS JUST SHARP ENOUGH. PROBLEM IS IT IS STOCKED IN JUST ONE STORE IN OUR TOWN AND CAN RUN OUT FOR LONG PERIODS. This was fantastic on a flat bread pizza, with an garlic alfredo sauce with plenty of melted cheese. When it's back in stock, I'll buy more and try other experiments.
