Born in 1946, Chef John Folse, founder of Bittersweet Dairy, is an international celebrity chef. He opened Lafitte's Landing Restaurant in 1978 in Donaldsonville, Louisiana. From that beginning, his stardom rose quickly, as evidenced by the fact that in 1989 Folse was the first non-Italian chef to create the Vatican State Dinner in Rome. According to Chef Folse, people who grow up in Cajun country simply become great cooks. That region of the United States offers the Gulf of Mexico with its abundance of salt water seafoods, an array of fresh-water lakes and rivers and of course, a lush, green and tropical swampland. Each of these environmental factors contributes equally to the bounty that is Cajun and Creole cuisine.

Fleur-de-Lis is made from triple cream Guernsey milk. The cheese has a slightly firm rind and a wonderful, buttery, creamy interior. This cheese is named after the symbol of France, the country that founded Louisiana. The primary producer of artisan cheeses in Louisiana, Chef John Folse's Bittersweet Dairy opened in 2002. In the short time since then, his dairy was rated one of America's Top 10 dairies by Saveur Magazine (April 2005). In addition, Fleur-de-Lis Triple Cream won a Gold medal at the 2004 World Cheese Awards held in London. Enjoy this Cajun treasure served with a Gewürztraminer, Riesling, or Sauvignon Blanc. How this cow's milk cheese wound up tasting like the back end of a billy goat, I don't know. I make a lot of cheese and have tried many, many artisan products. While the creaminess was right, the flavor was truly dreadful.
