Fleur-de-Lis is made from triple cream Guernsey milk. The cheese has a slightly firm rind and a wonderful, buttery, creamy interior. This cheese is named after the symbol of France, the country that founded Louisiana. The primary producer of artisan cheeses in Louisiana, Chef John Folse's Bittersweet Dairy opened in 2002. In the short time since then, his dairy was rated one of America's Top 10 dairies by Saveur Magazine (April 2005). In addition, Fleur-de-Lis Triple Cream won a Gold medal at the 2004 World Cheese Awards held in London. Enjoy this Cajun treasure served with a Gewürztraminer, Riesling, or Sauvignon Blanc. How this cow's milk cheese wound up tasting like the back end of a billy goat, I don't know. I make a lot of cheese and have tried many, many artisan products. While the creaminess was right, the flavor was truly dreadful.
