
Cheese making was part of Diane's grandmother's Greek heritage. She perfected her own version of Greek-style cheeses and later toured cheese plants in Greece to compare the taste of her products with those made in Greece. In the beginning, McCown started her cheese business by taking an entrepreneur program at the University of Nebraska-Lincoln's Food Processing Center. Being the first goat cheese producer in the state, there was no precedent for obtaining all of the licenses necessary to operate a goat dairy in Nebraska. She eventually tackled all the barriers, and is now thriving. Her Mozzarella Di Capri is a unique goat's milk Mozzarella, perfect in a Caprese salad or as a delightful pizza topping.

Like feta in a different form. Ok for pizza toppings, but tastes more like the goat than a sweet cheese. Use only if you are desperate for pizza and can't use a cow's milk cheese.
