Hendricks Farms is an award winning farmstead cheese maker, producing all-natural raw milk from their own herds of both Jersey cows and Saanen goats. Owned by Trent and Rachael Hendricks, the farm encompasses sixty acres of pasture, located about twenty-five miles north of Philadelphia.

Telford Tomme is a washed rind semi-soft unpasteurized cow's milk cheese. This is the one that makes Hendricks' customers come back to the farm for more. It is a stand-out, full-fat, ultra-smooth cheese. It becomes soft at room temperature, so much so that it is almost spreadable. We love its slight mushroomy flavor paired with Cabernet Sauvignon.

The piece I received did not fit the above description. It was more of a semi-hard cheese that did not become soft at room temperature. A little strong for eating on its own for my tastes, but a good cheese for grating and using in baked dishes.
