Located in: 50 States of Cheese, South Dakota
The Dimock Dairy Cooperative is the oldest cheese plant in South Dakota, opening its doors in 1931. Throughout the years, Dimock Dairy has changed little in its cheese production process, retaining the traditional methods that brought about their success. All of Dimock's cheeses are still made by hand in small batches, ensuring higher quality and more TLC. The dairy is owned by a cooperative of approximately 45 shareholders and employs nine full-time personnel. Dimock's Bacon and Onion Cheddar is a great snacking cheese. Best served with medium-bodied ales or lagers, this hearty cheese stands up well in the presence of other snack foods. It is a great melting cheese too!

This is a good quality cheese and it tasted good. I personally would have enjoyed the bacon and onions in a sharper cheddar than this.
