The small Rockhill Farm is located on a rocky hillside in Utah's beautiful Cache Valley. Many things contribute to the unique and full flavor of their cheese. First and foremost is the highest quality milk provided by their five Brown Swiss cows. By using unpasteurized milk, they create a greater depth of flavor from the cultures. And then there are the months of loving care given to each wheel of cheese as it resides in the aging cave. Rockhill Creamery cheeses are hand-crafted using traditional techniques, sustainable farming, and all-natural rearing of their cows.
Wasatch Mountain Gruyere is a mellow, rich-flavored, whole, raw cow's-milk gruyere. It has a wonderful complexity of flavors - at first fruity, then later more earthy and nutty. It has a "tighter" texture than Rockhill's gouda, but is very creamy. Noted wine critic John Raymond has been a longstanding fan of the cheeses of Rockhill: "We tried [Wasatch Mountain Gruyere] next to three super-aged Swiss Gruyeres. It held its own and it's only a fraction of their age. A great cheese."
