I grew up eating Brick cheese, which varies with age. This is a fairly young cheede with average taste, which should get better with age.

I cannot find Brick Cheese in California. [...] I can once again enjoy this treat from my childhood. Family visiting from, or returning from Wisconsin, knew they had to return w/ this cheese. I like that before it reaches room temperature, it is a little chewy. I love Brick with wedges of fresh from the garden tomatoes.

My grandfather always enjoyed brick with breakfast. Now, that's a bit much for first thing in the morning for me personally, but I still love this cheese with friends when we have some heifenweisen and roast beef with horseradish. Also good on hot ham and cheese.
