While Riesling holds great status in Europe, it is only recently that Americans have come to enjoy its fruity acidity, and truly appreciate its value at the dinner table. The same is true with Rieslings' incredible affinity to cheese. We have hand-picked the following cheeses to complement our favorite Rieslings.
  • Racuhkase: Germany is the original home to the Riesling grape, making it a must to include a fine German cheese in this assortment. Rauchkase is aged for 30 days, then gently smoked using a technique that dates back to early times. Inside its polished, edible brown rind, Rauchkase has a creamy, buttery, smoky flavor that ranges from mild to piquant.
  • Matured to perfection, Cave Aged Emmental is a special taste experience! Unlike traditional Emmental (also known as Swiss), this one has a dark brown rind and a unique, nutty, full-flavored taste. Made in massive 200 pound wheels from pure, unpasteurized cow's milk, this special "Swiss" is aged for at least 12 months in sandstone caves deep below the Santenberg in the Canton of Lucerne. Using ancient techniques, a constant temperature and humidity can be achieved in the caves all year round, ensuring perfect development of every cheese Emmi produces.
  • An aged sheep's milk product from Crotone, Crotonese is one of southern Italy's signature cheeses. Firm in texture with a slightly tangy, lemony flavor, this cheese is best served with the meal; either before as an hors d'oeuvre, or after as part of a dessert course.
Please note that any item temporarily out of stock will be substituted with a similar item of equal or greater value. Riesling not included.
