- Goat Cheddar: From Cypress Grove Chevre in California, the makers of our beloved Humboldt Fog, comes this aged goat's milk cheddar. Sharp and smooth, this cheddar is aged a minimum of one year, giving it a complex, nutty flavor with a lemony finish. (8 oz.)
- Baita Friuli: Baita is a tasty, firm-textured cow's milk cheese imported from Italy, which is aged for about five months. Rich, fruity, and spicy, Baita's raw-milk flavor is reminiscent of Swiss Gruyere. (8 oz.)

We've recently discovered Rose, and were at a loss what to serve for our tasting party. This collection fit the bill, and arrived very promptly and in great condition, despite the blistering heat here in NJ.
It seemed everyone had their own favorite, and some worked better with the different varieties we were serving. So all in all we were very pleased and look forward to trying their other collections.
