- Cashel Blue: This wonderful farmhouse blue cheese hails from Tipperary. Using only fresh cows milk from their fresian herd, Louis and Jane Grubb have produced this masterpiece. Ideal for melting or after dinner with some port.
- Dubliner tastes of a mature Cheddar, with the sweet aftertaste of Reggiano. Created by the Irish company Kerrygold and named after Ireland's capital city, this cheese shares traits with several well-known cheeses, but the combination creates a flavor that is completely unique.
- Cahill Farm Cheddar with Porter Ale is a visually intriguing cheese. Mixed with dark porter ale during the cheesemaking process, this cheese has a marbled effect with dark brown veins. Imported from Ireland, it has a surprising meaty flavor and is obviously a perfect match for ale.
- Our Green Waxed Cheddar is produced by Tuxford and Tebbutt from pure Irish milk. The milk for this "bitey" cheddar is taken from cows grazing the green grass of southeast Ireland, an area traditionally known as "The Garden of Ireland". This environment produces rich, creamy milk that is perfect for cheese making. Our Irish Green Wax Cheddar is aged for a minimum of 12 months, but may be aged longer as it is only when that distinctive strong Irish cheddar flavor is ready that Tuxford and Tebbutt's master grader will deem the cheese ready for sale.

This assortment is wonderful. I served a cheese board with these cheeses to friends..with wine and crackers. All the cheeses were fresh and tasty. The green wax cheese was second to none and the cheddar with porter was so different and exciting.. well there isn't any left. This is an assortment that everyone should try.

This is a truly enjoyable selection of Irish cheeses to tempt the palate. The Cashel Blue is particularly wonderful as it is a mild blue with just enough zest to be interesting without overpowering. Cahill Farm Cheddar with Porter is delicious with Guinness; and the Dubliner and Green Waxed Cheddar run to opposite ends of the spectrum with the former being sweet while the latter has definite bite. The portions in this sample are very generous, making this an excellent deal.
A great selection of tasty and eye-appealing cheeses! Combine them with one of the Irish mustards for a nice appie presentation.

This sampler of Irish cheeses met our expectations. We find [...] products in general to be fresh and delicious. These cheeses met or exceeded these expectations. Our dinner guests made quick work of these cheeses served as appetizers with Irish beer and American wine.
All four of the cheeses in this sampler are very different from one another and all are tasty. The cheddars disappeared from the kitchen counter quickly one after the other - room temperature a must.
