Golden Ridge Cheese Cooperative is a new dairy company owned by a group of Amish dairy farmers from northeastern Iowa and southeastern Minnesota. Their cows are all milked by hand and in a family setting on small farms, resulting in minimal stress to the animals of this milk source. The name of this cheese, Schwarz und Weis, is how the Amish would say Black and White; symbolic of their approach to life. These outwardly plain people adopt a simple approach to living, a "black and white" approach; but within this simplicity, just as with the simple beauty of a black and white photograph, their culture reflects a spirit of grace, beauty, and honesty.
Inspired by French and Spanish blue cheeses, Schwarz und Weis Blue pays homage to great cheeses like Cabrales and Fourme d'Ambert. The cheese owes its mild and mellow character to the blend of milk produced on the farm and the unique surface flora found there. This new blue from the Golden Ridge Cheese Co-op is extremely flavorful. Its excellence was recognized in 2004 when it won the gold medal for "Best Blue in the US", awarded by the American Cheese Society.
