Black Castello scooped a gold medal at the World Cheese Awards 2007 held recently in connection with the International Food & Drink Exhibition in London, and deservedly so. A great addition to the Castello line of premium soft-ripened cheeses, Black Castello is Tholstrup's first Castello cheese made from both cow's milk and sheep's milk from Denmark, with special ripening cultures from Southern Europe. Unlike most other blue mold cheeses where surface molds are washed and removed, Tholstrup chose to maintain blue mold on the cheese's outer fleurie. The result is a distinctive, bold blue cheese with a creamy, supple texture. Sure to become a new favorite for our blue cheese fans.

Served this cheese at a wine tasting dinner and everyone loved it. It is the best blue I have ever had, and so nice and creamy. Not to strong, just perfect with sauternes.

Very different than Blue Costello; qualitatively more redolent and flavorful. An ample supplement to any artisan bread. Melting over fresh toast creates an undeniable and substantive exclamation of refined blue taste.

I really enjoyed the texture and taste of this cheese. I was a great snack food while surfing the net and watching vidoes. It wasn't too creamy or crumbly; it was "creambly." There are so many great cheeses here!

Blue cheeses were not on the top of my list of favorites until I tasted this cheese! Perfect with a full bodied wine. I made a simple sauce with this and served it over filet mignon and my guests couldn't get enough. I have made it a point to keep this cheese around.

We were intoduced to this item two weeks ago by a nephew. Our pre-season tailgate party was a huge success because he passed around a tray of this cheese and several of us melted it on our rib-eye steaks and added just a sprinkling of parmesian to go with it....Melt in your mouth goodness (the cheese) and the steak was great also.
