The history of Mozzarella is linked to that of the water buffalo. Nobody really knows exactly when the first water buffaloes came to Italy, but one account claims that it was in the year 596 AD when they were brought across the Mediterranean. This oft-copied but never duplicated gem is a fresh, drawn-curd cheese made from whole buffalo's milk. Most people don't know what water buffalo milk tastes like, but upon one's first bite it is unmistakable that this legendary cheese is made from an unfamiliar milk. It is porcelain-white in color, spherical in shape, with a very thin, glossy, edible rind. Mozzarella di Bufala has a springy texture and a pleasantly sourish taste with a faint mossy smell, reminiscent of the humid grazing fields of Campania in southern Italy. If you've never had the real Mozzarella before, it's definitely time you tasted this sublime delicacy.

An adequate mozzarella di buffala. Price is good and the cheese has good texture and a buttery taste,yet lacks the oozing milk and unique muskiness of other buffaloes, most notably di Campania.

I don't know,so many people think this is such a great cheese but I found it to be bland, mushy and so soft it was hard to slice. We have a few Italian markets here that make excellent cows milk mozzarella that is milky, creamy and just firm enough to slice nicely. I'll stick to these.

This is a simple but gourmet item. Don't cook this one, it's meant to be eaten as is. Use as a Caprese salad w/basil and sliced tomatoes and drizzle good EVOO and vinegar on top. First tasted this near Naples, Italy, on the farm where they made it from the water buffalos. It's a far cry from the prepackaged mozzerella sold in the dairy section of our supermarkets. For a special taste treat, try this.

I think for all the whoopdedoo about buffalo mozz I was disappointed. It was waterey and crumbly. But I did manage to slice and eat on my tomatoes and basil. The flavor was good - I ate the whole deal! Leaning towards the fresh in my market at this point. Would like to try again.

I kept seeing this product on the food channel, and I knew it was going to be good. I had it with wine, and later as a snack. I didn't order enough of it to experiment with sandwiches or cooking. I will be ordering more,...it offered lots of texture and flavor, and I am sure it would be absolutely wonderful on pizza. But then again, it was great all by itself. Very good taste.
