The newest creation from Paula Lambert, author of The Cheese Lover's Cookbook and founder of the Mozzarella Company is this luxurious Burrata. Their burrata is made in the style of Burrino. It is a fresh Italian-style cow's milk cheese made by completely encasing a soft, creamy lump of sweet cream butter with soft, fresh mozzarella. Its name comes from its buttery center: burro means butter in Italian. It is a seductive cheese.

To make this burrata, the Mozzarella Company churns fresh cream to make sweet butter, then stretch cheese curds to make mozzarella. The mozzarella is hand-formed around a one-ounce piece of butter to conceal a soft, creamy center inside the burrata. Each and every step is done by hand. Finally the burrata is briefly immersed in brine before it is wrapped in parchment paper and packaged. The flavor is fresh, milky, and buttery.

This is not Burrata it is a ball of dry mozzarella with crumbly butter inside.burrata should be fresh and creamy and melt in your mouth... worst [$] i ever spentI am forced to give it a star but it should be minus two

I won't buy this one again. It was flavorless and not a very good texture. Not smooth or creamy. The butter in the center was equally bland.

The cheese was good but it did not have the creamy ricoota center that burrata should have! It was basically mozzarella. Burrata also comes encased in a leek

I have never tried this type of cheese before, so I have nothing to compare it with, but I really liked it. I let it get to room temp and placed a few slices on top of salad. It's also good on crackers. Nice buttery taste. I will definitely purchase this again.

If you are looking for real Italian Burrata, I am sorry to say this isn't even close. Real Burrata has a small "freshness" window...this stuff was the same after a month.

....If you are used to traditional burrata. If you have been to Italy and tasted real burrata you will be disappointed by this version. Not nearly as creamy and fabulous. If you aren't familiar with real burrata, then sure, you might like it as a "cheese."

Unlike the other reviewer, I found the actual butter inside to be a delightful conceit, perfect for panetini or cracker. Letting the cheese come to room temperature softens it to a creamy smooth spread - perfect with fresh fruit or a pate mousse. Delicious..! :)

After having had the hard to find *Real* Burrata from Italy, I was pleasantly surprised to find and anxiously looking forward to Paula's Burrata, knowing how she loves mozzarella. Even though Burrata means "buttered" it is not supposed to be filled with butter. That is meant to describe the buttery texture in the middle from the cream that is poured into it. I found this a pale, dense, uninspired imitation of the real thing, which is a rich but light tasting and wonderful experience. This version was not even as good as a fresh well made American mozzarella.
