The original pioneer of Blue Stilton, commonly referred to as "The King of Cheeses", was Mr. Cooper Thornhill, owner of the Bell Inn on the Great North Road in the town of Stilton. In 1730, Mr. Thornhill discovered a distinctive blue cheese while visiting a small farm in rural Leicestershire. He fell in love with the cheese and forged a business arrangement that granted the Bell Inn exclusive marketing rights to Blue Stilton. Soon thereafter, wagon loads of cheese were being delivered to the Inn. Since the main stagecoach routes from London to the North of England passed through the village of Stilton, he was able to promote the sale of this cheese and the legend of Stilton rapidly spread far and wide. This glorious 2 pound wheel of Blue Stilton is the cheese the English have kept for themselves until now! Its extraordinary flavor comes from careful aging for a minimum of four weeks. This special Stilton, still produced in Leicestershire, is full, rich and creamy. Its shocking blue veins radiate outward from a natural, crinkly brown crust, revealing layers and folds of honeyed, cheddary flavor. We recommend this Stilton as a pure table (eating) cheese. It is too precious and delicious to submerge in a dressing or dip.

Powerful but not overpowering flavor. I love it as a quick nibble and as a whole meal. I just wish it was not so hard on the waist line - BUT - cannot imagine/don't want a slimmers version!

I like to snack with rye crackers and apples with the stilton cheese. It was awsome! We had some of our neighbors over for cheese and wine. They were impressed and wanted to know where we got the cheeses. We purchased the blue cheese assortment as well as the royal stilton gift box. When it is gone I will order more and will also order gifts. I recieved the cheese in perfect condition with in 3 days. I was very satisfied.
