The cheese industry in Belgium, although smaller and less well known than those of France, Italy, or England, is still going strong and creates some wonderful cheeses. Chevagne is one of these Belgian beauties. It is a surprisingly mild and creamy goat's milk cheese produced by the Passendale Dairy. Made with goat's milk of the highest quality, this smooth cheese is delicious sliced and served on a dark, nutty bread; shaved over salads; or as part of a cheese board. Chevagne also melts well.

I love, love, love the flavor of this cheese, but my satisfaction depends on how much of the exterior portion of the whole form is sent to me each time I order it. The rind is extremely tough and seems almost without flavor. The last order I placed, I received a corner piece that seemed like a waste because I ended up carving off about half of it to enjoy the smooth, flavorful center.

This cheese practically melts in your mouth although it slices well. The taste is tangy, slightly sharp and very flavorful. Goes well with simple crackers or bread, but I love it solo with a crisp apple.

This is the first experience we've had with chevagne, and it will definitely not be the last! We've eaten it sliced on crackers; melted on a baguette or English muffin; after dinner with pears, apples, and grapes; and in various salads with pears, spinach, almonds, pistachios. We haven't tried, but I think it would make, a great mac and cheese, as well.
