Haystack Mountain Dairy, a goat farm and creamery located on seven acres of the rich agricultural plain that skirts the foothills of the Rocky Mountains northeast of Boulder is a farmstead dairy comprised of dedicated people and a healthy herd of Nubian, Saanen, Alpine, Oberhasli and LaMancha goats. The mix of milk from all of these goats produces delicious cheeses.

Haystack was recently honored as one of 24 U.S. dairies invited to send cheese to the third "Feast of Cheeses" in Bra, Italy. The festival was sponsored by Slow Food International, an organization founded by Italian writer Carlo Petrini as an antidote to the industrialization of food production by fast-food outlets.

Medallions of Boulder Chèvre are marinated in a blend of olive oil, canola oil, minced garlic and Herbes de Provence and presented in an attractive glass jar for serving. Chèvre in Marinade is made from pasteurized goat's milk from the Haystack Mountain Dairy. Absolutely delicious with warm crusty bread, as a topping for pizza, or added to your favorite pasta shapes with grilled vegetables! Pour yourself a glass of Sauvingon Blanc or Sancerre. Delicioso!
