The crumbly, salty tang of English Cheshire gets a nice bit of tempering with the addition of orange and clementine. With the crisp citrus zing of orange peel paired with the brightness of clementine marmalade, a perfect fruit foil is created to produce a refreshing and savory twist on this farmhouse staple. Aged for two to three months, this Welsh cheese has a crumbly texture that arises from having the curd repeatedly broken and pressed to push out water for a firmer texture.

I used this fruity tasting cheese as an Hors d'ouvre topping, and it was a great hit with everybody. Then I crumbled it on top of a dinner salad, and wow! Absolutely fantastic!
