Romania, which is predominantly mountainous and rocky, is known for cheeses made from sheep's and/or goat's milk. We import a wonderful Romanian sheep's milk Feta, known as Telemea locally. Feta, the best-known white brine cheese, has a crumbly, soft texture and comes immersed in its brine to keep it young and fresh. Often crumbled into Greek salad, Feta is also an excellent eating cheese, especially when paired with olives.
Because Feta is packed in a salty brine, it often tastes saltier than it should. A simple way to unmask the real flavor of the cheese is to soak it in cold water or milk for 10 to 15 minutes to remove the excess salt.

As far as I'm concerned a better Feta than Greek....a lot cheaper as well.

Very good - authentic Telemea. If you are Romanian or have lived there then you have to try this - have had nothing close since we left Romania 1o years ago. Buy it!! Pofta Buna!
