A superb addition to steaks and burgers! Great in salads or in a sauce too. Has become a staple in my kitchen.

Served in hamburgers, grilled and served on Thomas' English Muffins. Great on salad with Italian Dressing.

Great flavor

This has a great flavor but I didn't like the texture as a table cheese. It's rather dry and crumbly -- I suspect it's very low in fat. When I started using it in cooking, I fell in love with it. For example, I added it to a cream sauce and then used the cream sauce to make creamed spinach -- outstanding! The smokiness really comes through and the blue doesn't have the unpleasant sharp metallic flavor that some do.

There's definitely a place for this in recipes, but I don't like it straight up. I would buy it again because of its great flavor.
