The result is magic! "Oregon Blue" is a classic Roquefort style blue cheese that is cold smoked 16 hours with Oregon Hazelnut shells. Smokey blue is a step beyond the traditional blue. It adds a whole new dimension to foods and tasting pleasure. It is wonderful on hamburber or steak with or without sauted mushrooms. It sparkles up a salad. It is a great "secret" ingredient in a cheese sauce for vegetables.

Although this cheese is a great accompaniment to fruit and crackers for appetizers, and sliced over a fresh bed of salad greens, there is no better way to enjoy is than having it with a good Vodka Martini (adults only, please!). We stuff queen green olives with this cheese, or just place a slice inside the martini glass. Talk about martinis at a whole new level!

This has a great flavor but I didn't like the texture as a table cheese. It's rather dry and crumbly -- I suspect it's very low in fat. When I started using it in cooking, I fell in love with it. For example, I added it to a cream sauce and then used the cream sauce to make creamed spinach -- outstanding! The smokiness really comes through and the blue doesn't have the unpleasant sharp metallic flavor that some do.

There's definitely a place for this in recipes, but I don't like it straight up. I would buy it again because of its great flavor.
