Robert F. Hart began making this fine Canadian cheddar in 1933. Today, Black Diamond is probably Canada's most well-known cheddar. Made from raw milk, this white cheddar encased in black wax is aged a minimum of two years and has a sharp, robust, tangy flavor.

This is an unusual cheddar. Not at all sharp as advertised, but certainly not bland. It has a complex, somewhat foul taste, which I like never expected in a cheddar.

This is a nice sharp cheddar as it is. I had it in a salad which worked out great. However it is BAD melted tastes way too salty for melting. My finicky twin boys liked these cheese.

I'm not into "sharp" cheeses but this cheddar is so smooth and flavorful I absolutely love it! I first tasted it at a restaurant as part of a cheese sampler and then found it here - I will definitely order it again.
