Using only raw grass-fed milk, this cheddar is washed with Foret (tm), the finest Belgian farmhouse ale. This is not a beer-flavored cheese, though. The ale actually transforms the ripening process. Profoundly complex with lingering grassy notes, this unique cheddar is quite unlike any other we have tasted. Whilst others tend to rely on the sharpness that cheddars are prized for, this has an unsurpassed depth of flavor and delightful texture. We've just tasted it and now I'm ordering 2#. We enjoy a wide variety of cheeses but this cheddar is in a class by itself and with so much flavor a small piece is very satisfying. And then maybe another small piece...

This is a very unique chedder in that it first has the taste of a blue cheese- however, the after taste is a very bitey chedder. I did not find it appealing as I normally associate a "blue cheese" with smooth texture. The "mold" also was a bit unappealing especially when serving to the guests at the tasting club. If you like strong cheese, then this if for you.
