I love this cheese not just for the taste, but also for its versitlity. A creamy cheese still firm enough to slice thin on fruit so both flavors can be tasted is perfection to me. I first had this cheese at a cheese stand in a little town in France on Market Day. My husband and I loved it! Its slightly salty, intense flavor is fabulous with pears. It's a full, hearty bleu.
