This blue from southeastern France is creamier than Roquefort, owing to the fact that it is made from cow's milk rather than sheep's. The terrain near Auvergne is craggy and desolate, and thus, better suited to raising sheep than cows. Even so, the region manages to produce enough cow's milk to eke out its small annual production of Bleu d'Auvergne. Bleu d'Auvergne is great crumbled on a tossed salad. You should also try a small piece on a slice of apple for a beautiful, healthy midday snack.

I love this cheese not just for the taste, but also for its versitlity. A creamy cheese still firm enough to slice thin on fruit so both flavors can be tasted is perfection to me. I love a little as a rich treat in salads, and it's perfect as a more workable cheese with fresh figs than gorgonzola dolce's softness.

A wonderful blue cheese! This cheese has a strong blue cheese flavor but is very creamy and smooth. It is a bit pungent, but the flavor is pure. If you are a blue cheese lover you have to try this one!

I know this cheese is commonly eaten as part of a cheese course, with fruit or, perhaps, on a salad, I would suggest it on a sandwich. You don't need to add much because it has such a potent flavor. Wow.

This is one of my favorite blue cheeses. I have ordered it a number of times and it is always arrived at the peak of its flavor. If you like Roquefort you will probably like this variation.

I first had this cheese at a cheese stand in a little town in France on Market Day. My husband and I loved it! Its slightly salty, intense flavor is fabulous with pears. It's a full, hearty bleu.
