Roaring Forties Blue Cheese is made by the King Island Dairy. King Island is situated south of Melbourne, Australia at the western end of Bass Strait. Dairying is the largest primary industry among this island's 1,500 inhabitants. According to local legend, grass seeds found in King Island's soil are believed to have been washed ashore in straw mattresses from some 60 eighteenth-century French and English shipwrecks that are strewn along the King Island coast. For almost a century now, dairy herds have grazed on these unique pastures. The quality of these pastures, combined with a pristine environment, combined with a year round growing season, enables the dairy farmers on King Island to practice traditional feeding methods. The cows are reputed to produce the sweetest milk in the land and from this milk comes a range of dairy products acknowledged throughout Australia and rapidly earning the same sort of reputation in the international marketplace. Roaring Forties Blue is a full-flavored blue with a sweet, nutty character. The cheese is matured in blue wax, thus retaining its moisture and creating a smooth and creamy texture.

Over several orders of this cheese I have been amazingly impressed with it's truly unique consistency and tangy blue taste. I've also shared it with a number of people that have a similar opinion. It has a bit of an aftertaste, but it's of the blue kind in that it's kind of a mouth watering punch of flavor, not really bitter, or at least not any more so than other strong blues. This is not a mellow cheese by any measure. It's unique character holds up well with other tastes as part of an after dinner snack or before dinner hors d'oeuvre. The cheese is also firm but spreadable, and due to the wax rind, not crumbly like some other cheeses. I would rate it firmer than a Roquefort but less than a harder blue, like Mountain Gorgonzola.

The cheese does not melt well (or at least not at low temperature), so probably is not a good blue for cooking. It works quite well as a snack cheese and is great with a really bold wine accompaniment.

Perhaps my palate is not as sophisticated as some, but I just did not enjoy this. I have tried many blues, this one did not appeal to me at all! Seemed too salty to me, and left a bad aftertaste. I always try a new cheese by itself first, to get a feel for the characteristics of that cheese, and how best to use it based on that. I never got past the "trying" stage, but maybe there are some good uses for it. Will not buy this one again, sorry.
