Bruny Island is two islands joined by a narrow isthmus called 'The Neck.' Bruny is Tasmania's fourth largest island, off the southern coast of Tasmania. The Island offers breathtaking scenery including dramatic coastlines, enchanted rainforests and tranquil beaches. This pristine, unpolluted island is home to Bruny Island Cheese Company. Nick Haddow has spent almost a decade travelling the world learning the craft of making cheese. After gathering traditional recipes and techniques Nick decided to make a life on Bruny Island with his partner Leoni, where they began making their own cheese. Nick calls himself a 'traditionalist' and he's passionate about the old way of making and maturing cheese.
C² is the sort of cheese found throughout the mountains of France and northern Italy. A classic cooked curd cheese made in traditional wooden hoops. C² matures for 6-12 months, during which time it develops a sweet aroma and a mildly nutty flavor. The rind is wiped every week to encourage the surface bacteria that provide this cheese with much of its integrity. This product is suitable for vegetarians.
