this is not the sharpest cheddar in the world. i like those too. yet the cheddar flavor here is very pronounced, so i wouldn't really call it mild either. perfect for anything you want a good cheddar for--cheese and crackers, grilled cheese sandwiches, mac and cheese, tacos, cheese and fruit (really, it's excellent with apples and pears). a lovely cheddar that transcends its pretense of simplicity.

This cheese was too bland for me, but I love stinky cheeses. My 2 year old grandson loves it though.
