Soft but also firm enough to cut, dotted with pea-sized holes, mild yet a little spicy with a cherry-fruity aroma, Wälder is the pride of the Alma Cheesemaking Company of Vorarlberg, Austria. Think of it as a creamy Appenzeller. If you are unfamiliar with Appenzeller, think of it as a creamy, spicy Gruyere. Ripened for a minimum of 140 days and cared for with due patience during that time, this cheese is produced from natural alpine raw-milk by only a few dairies at the Bregenzerwald.

I really liked this cheese in small cubes that had been warmed a few seconds in the microwave right to the point of melting. It really brings out the spicy hints of flavor mentioned in the description.

This is the cheese I head for when I want something nutty. I could nibble on this all day. Unlike some of the other nutty cheeses, there's no dryness to it. There's just nothing about this cheese to dislike.
