This cheese is so amazingly unique. Because of the low salt content, it has the texture of an aged gouda, but the subtlety of a much younger say, Edam. Sure, you still get all of the favorite caramels, nuts and , but they are not so overpowering as to dominate the entire palate. Pair with nuts, dark fruit, chocolate, or even sauerkraut or lox for amatrimonial combinations. A truly solitary product that will turn on even the most disputatious foodie into a fan of the aging process.

This cheese was everything I wanted my aged goudas to be - deep, rich, and complex, yet still completely snack-worthy. Fantastic for beginners wanting to try new cheeses, as well as those more familiar who either want to try something new themselves, or introduce this sort of thing to others. Put it on your cheese plate - you won't be sorry!

This has got to be one of the very best cheeses I've ever tasted. Oud Bruges has a fantastic deep rich flavour that really compliments Belgian Beers. Try it cut into 2cm squares, served with a little celery salt & a good Belgian Beer, simply superb!

We found this cheese on a trip to Brugge and brought some back with us. We were very happy to find that we could purchase it on-line. It's best at room temp or a little cooler. Not as good straight out of the rerigerator.
