tThe cheese may have been aged and washed with ale but it was a washout for taste
Comments about Chimay Vieux:
This one is by far the most easy going of the Chimay Cheeses. It's strong, but not pungent, and surprisingly smooth and well balanced. The texture is a little bit lacking, but the taste more than made up for it.
This cheese pairs beautifully with a bolder red wine or any of the superb Trappist Quadrupel's. Let it warm up a little, as the texture improves greatly around room temp.
Comments about Chimay Vieux:
Excellent taste -- easy to plane.

Comments about Chimay Vieux:
One of the greatest cheeses of the world. Beautiful color, great texture, slices easily. But the most notable feature is taste. Mild and rich at the same time, Chimay Vieux's flavor reminds you of a great cheddar without the bite.
Although the cheese is great for eating out of hand, it is even better when melted.
Chimay Vieux is highly recommended
Comments about Chimay Vieux:
This cheese gives you the flavor of what you expect in a milky cheese, and it flavors you choice of a red wine.
