- Passendale: A semi-soft cow's milk cheese, Passendale impressed us as a sure hit the first time we tasted it. Each of these are so different. I loved them all. The Chimay was stinky but tasted mellow, like an aged brie. The Capra Goat was superb (if you like goat cheese) and you can really taste the honey! The Passedale is the firmest and was great on a cracker or plain.
