The fame of Isigny butter goes back to the 16th century. Years later, in the 19th century, the population of Paris alone consumed 800 tonnes of butter a year. How do they explain the fact that the gourmets of the day favored Isigny butter? It is simple! The Isigny terroir has the advantage of a mild, damp climate; is near the sea; and enjoys the benefits of the Bessin and Cotentin marshes. The cows which graze there are fed on grass rich in iodine, beta carotene and trace elements.

The quality of Isigny butter reflects all these natural advantages. It is impossible to confuse it with any other butter. It is yellow like buttercups; it has a faint taste of hazelnuts; contains coarse rock salt; and it is rich in Vitamin A. All of these qualities were noted in the Appellation d'Origine Controle specification, which has been in force since 1986.

I would recommend this butter in a heartbeat but I have to point out a problem I had. There was a super thin piece of wax paper around the butter that stuck to the butter so I had to take a knife and scrape this paper off the butter. This wasted some butter in the process. I don't know if this happens to all the butter or just my batch but it was a real pain and wouldn't reorder because of this issue. Other than that, it was quite delicious.

This nice spread fits great in my water-lock butter dispenser and goes on crackers or any toast or anywhere you want a good buttery spread. I don't cook with it. It stands alone. The coarse salt content doesn't make it crunchy just tasty.

The aluminum foil has a thin paper liner insie,
which is stuck to the butter. Either you melt the butter with the paper and strain or you spend the
better part of half an hour to scrape it off
(including som butter).

other french butters get better reviews but this little nugget of grainy joy never ceases to amaze and surprise the palate. though hard to spread, once in the right temprature and responsive, nothing beats the rich taste of northern pastures dotted with grainy salt. Bravo!
