If you enjoy our Vintage Canadian Cheddar, then you love this cheddar aged for another four years. This eight year old Cheddar is a firmly pressed cheese with a hard, homogenous texture. The cheese begins life with a flexible texture and slightly acidic, buttery sweet taste. The fat, protein, minerals and ashes gradually break down during the fermentation and aging process, which intensifies the flavors and firms and dries the texture. Made in Quebec, this Cheddar does not contain food coloring. Instead, it showcases a lovely, off-white color. Still full-flavored; more intense and tangier than its younger sibling. This is igourmet’s oldest cheddar.

Surprised at how much I liked this Cheddar. Thought it might be too strong, but it really grew on me! Very firm, and a "mature" cheddar taste - if you like mild cheddar, this is not for you. Loved it!

My son accidentally used this make make nachos. Everyone at the table was commenting on how wonderful they were that night. Then I discovered the mystery of the greatness. But truthfully, the cheese stands even better on it's own. A great flavor.

This chedder was fabulous- one of the best aged chedders I have ever had. I have enjoyed it and find it has a distinct flavor that will make you want more.

This cheese is so delicious. I will be ordering more. I took it to a prty with various other cheese trays and mine was gone in 10 minutes, while the other languished. This is truely a remarkable product. Sharp as a tack, and I am a coniseuer (sp)of fine sharp cheese. I am also a health nut!!! i am so impressed with this cheese because the Canadians don't use rBGH (recombinant bovine growth hormone) American cheese (and most dairy products)are poisonous. I jsut can't wait to order and consume more of this truely fine product.

This is fine cheese. Fine crystals of lavor and a excellent fridge shelf life while being consumed-used in many different things best warm with tred wine

Since I grew up in Montreal I have a fondness for good Canadian cheddar which I cannot find in Mississippi. This cheese brings me home!
