We always had Danbo (Christian the 9th) in the house especially on holidays. Used to get it from Lunds Deli in Brooklyn in the 40's and 50's along with the other Danish and Swedish delicasies. I haven't had it for about 10 years as it seems to becoming scarce. I generally have it on a buttered piece (several) of WASA bread or in a sandwich. Even my grandchildren like it.
I ordered it several times on igourmet. My Danish husband eats it sliced on top of Cibatta and Baguette.
I used this cheese along with four other cheeses for oversized grilled cheese sandwhiches. They were so delicious. A real hit with everyone. Melted well and wasn't greasy.
There is no greater cheese than this cheese. If you haven't tried it you should.
