This stuff is amazing! Loved it. I cut up a baquette and dipped the peices in melted butter with garlic and baked them until crisp and let people spread the cheese on it. It was so good.

The blue castello has an unusually good flavor and is best when spread on crackers or hard pretzels.
The consistency is perfect when at room temperature. All I have introduced it to, have raved about it's flavor.

Delicious by itself! I am eating it with ice coffee and pumpernickel and then just letting it melt in my mouth. Outstanding! Blue Saga from the supermarkets doesn't come close to how wonderful this blue tastes. mmmm, take the time to savor it...
Blue Castello is one of my favorites.

Delicate but BLUE flavor. Very creamy, almost buttery and is wonderful spread on a hunk of fresh crusty bread or on a slice of apple. I have it with a big red cabernet for my treat when I get home from work. I just love this cheese
