The Danish Cheese Institute rediscovered this old recipe in 1951. Previously known as Danish Port Salut, it is now named Esrom, after the monks who made this forgotten cheese in Esrom Monastery. Made from partially skimmed cow's milk, it is slow ripened with starter cultures for 10 - 12 weeks. Esrom has an orange, semi-hard rind that has been rubbed with brine during the aging process. Its interior is semi-soft with a supple texture and irregularly shaped holes. It is full-flavored with a big, rich, pungent aroma and becomes spicier as it ages.

I had never had this cheese before and wanted to try a new Danish cheese. I love Havarti. My daughter and I gagged and spit this cheese out. It must be an acquired taste that we won't be acquiring....

I am NOT happy as a new customer that you sent me the heel of the Esrom. You cannot serve a heel piece to guests. I had to cut it off. By the time one cuts it off, the piece of cheese looks raggedly because it is soft. It also weighs less than paid for. Some people like the heels of cheese.... they can request them. I am very disappointed in your decision to send it.

Normally I love this cheese, but this time the cheese was so soft it was difficult to slice with a cheese plane. I had to use a knife and the slices were not as thin as I like.

First tried in Danmark in the 50's. Grandparents bought it from "Oste Larsen" delivered by horse and wagon to the house in Helsingor DK. My prefered way to enjoy Esrom is on a roll with butter plenty of Esrom with a cup of tea any time of the day. Sadly the market that I got it from no longer carrys it, They never said why, but I suspect its short shelve life.

This is a lovely, assertive cheese that explodes with flavor in your mouth. I recommend it to anyone who likes bold flavors. If you like American cheese, this is not the cheese for you because of Esrom's robust flavor. As other reviewers have said, it is very hard to find in the U.S. I like it with a hearty rye bread - but I also like it all by itself. Esrom is great with fruit, too. It does ripen very quickly at room temperature, so it is wise to cut off the size piece you can eat in a day or two and keep the rest of the Esrom in the refrigerator.
