Tilsit is a surface ripened cheese first made by Dutch settlers in East Prussia, near the town of Tilsit, in the mid-19th Century. They were trying to recreate their beloved Gouda, but the cheese became infected with moulds, yeasts, and bacteria in a damp cellar and so, Tilsit was born. Also known as Tilsit Havarti, this cheese has a fuller and more intense flavor than Havarti, but is milder than German Tilsit. Made of partially skimmed milk with a brownish-orange washed rind, Danish Tilsit is more yellow in color than Havarti but has a similar springy, elastic, semi-firm texture, ideal for slicing. Danish Tilsit also has a piquant flavor, making it a great table cheese to enjoy with a Danish beer. Try this versatile cheese cubed in salads, melted in sauces, on potatoes, flans, or on burgers.

This cheese is great for people not heavily into the more pungent cheeses. So very smooth and flavorful that even those whose normal fare is processsed cheese will be converted to great cheese afficianados. They won't be disappointed!!!

When I was first introduced to Tilset, I had it on dark buttered bread. Now I enjoy it on toasted bread. The warmth of the toast brings out the rich flavor of the cheese.

Agree with aussiecoug that this isn't for everyone, but i love it melted on dark bread or with sliced ham. grocery store tilsit is tame by comparison to this the real stuff

This cheese is described as having a full, intense,piquant flavor. It certainly is flavorful and for those who love the flavor of Tilsit it might be great! But of the approximately twenty people who tried Tilsit cheese for the first time, not one liked it, a few found it to be tolerable, but most thought it was terrible to revolting. Tilsit has to be an acquired taste (Hey.. I love Vegemite so I am not one to judge!)
