I just love it that Bulgaria, the diamond of the socialist regime, produces a product of this quality. Just as the country's beaches were compared to the best of capitalist coats, this cheese stands in the top tier of all fetas. Tangy, rich and surprisingly smooth for a feta, the cheese has a wonderfully pervasive taste that reminds one of green pastures speckled with wild herbs.

I used this feta the way I've used other fetas -- and was amazed by the difference in texture and flavor. Most fetas don't melt very well when you put them in pasta; this one melts without losing its character. It's creamy, both sweet and salty, and improves just about anything to which I've added it, including couscous, farro, and spinach salad.
