Comments about Cypriot Halloumi:
Wonderful cheese. I had it on vacation, fell in love with it. Great cheese, but hard to find.
Comments about Cypriot Halloumi:
I grilled the cheese just before serving on my griddle, squeezed a little lemon juice on it, and served it alongside a portion of mache and diced apples mixed in an oil and vinegar dressing. This was a salad course served at the end of an eight course meal, and one package served eight of us. The portions were small, but just enough under the circumstances. The cheese had a mild flavor, and was quite good. But mostly it was a great conversation piece because it's so unusual.

Who ever heard of a cheese which could be grilled? Frankly I love it's texture and taste
Comments about Cypriot Halloumi:
I never fire up the grill without putting on Halloumi. The crunchy lightly-charred edges and squeeky center please the palate.
Comments about Cypriot Halloumi:
Great grilled (which seems to really accentuate the flavor), served with salad/veggies/meat/anything. Really glad to find this available and have purchased again and again.
Comments about Cypriot Halloumi:
Halloumi is a wonderful cheese from Cyprus, that you can grill, fry, or boil. I have eaten it all three ways, but I enjoy frying this cheese the best. This cheese does not melt when you fry it.
The flavor is a tad bit salty, but I don't mind that at all. Also, when you fry it, you must eat it straight away, that is when it tastes the best. Don't let it go cold. Halloumi is very different from any other cheese you would have come across, so if you have an open tastebud, I seriously recomend this cheese to you. It is delicious!!!!

We loved the cheese, however, were apprehensive as it came very warm.

This has provided a great substitute for those sensitive or allergic to cow's milk. I've used it with a goat gouda for baked Italian dishes and sliced for sandwiches. Though pretty moist, its easy to grate. Stays well once open too.

I'm a Cypriot, so I grew up eating this cheese. In Cyprus we grate it and mix it with dried mint and sprinkle it on top of spaghetti.
Also when we make kebabs, we grill it.. For grilling you can use your George Foreman grilling machine. Put some foil inside, to make the cleaning easier..
Another way to eat it, is to put it inside of pita bread and grill it, you can add tomatoes as well..
You can put it inside omelette's..
And in summer, when we can't eat anything heavy, we eat halloumi with watermelon...
Also we make 'Hellimli' which is a kind of a bread with Halloumi, onions and mint..

halloumi is one of a kind. you can eat it fresh or you can bake it, fry it, put it in stews or in soups. but i personally enjoy it with fresh cut tomatoes and fresh baked whole wheat bread. if you want to add some butter...oh! then you can really understand the simple pleasures in life!!!!!

Comments about Cypriot Halloumi:
From the Gourmet Magazine, there was a recipe to grill this cheese after brushing it with olive oil and a few spices. I served it as a main course with french bread brushed with the same oil. Very rich and filling.
Comments about Cypriot Halloumi:
Very versatile, best flavor brought out when heated or grilled. Works well with pastas and can be used crumbled as a salad topper. Briny, taste but not excessively so and can be reduced a bit by rinsing and letting the cheese drain. I've also cubed it and served it chilled or at room temp with fruits, sausages, other cheeses and crackers.
Comments about Cypriot Halloumi:

Comments about Cypriot Halloumi:
this cheese is awesome! it has the texture of mozerella w/ the taste of brine. best fried in a pan or on the bbq (more even in a pan). toast some almonds and sprinkle lemon juice on it while its hot - serve w/ watermelon and wine its oh so good!
but its good any way you eat it - enjoy the squeaking in your teeth!
