Trappista is the Hungarian word for Trappist, a Roman Catholic monk of the Cistercian order. The Trappist way of life is based on a 12th century interpretation of the monastic rule by the founders of Citeaux. Their general beliefs are brotherhood and peaceful restraint while praying, studying, working, and honoring their reputation for hospitality. Part of their mission on earth was to create self sustaining abbeys where the monks made their own wine and cheese - not only for themselves, but for visitors and weary travelers.
Hungarian Trappista cheese is derived from a French monastery recipe. It is inspired by Port Salut, but firmer with a smooth, springy edible rind and a havarti-like taste. With its mild, savory flavor, this versatile cheese can be enjoyed by everyone.
