Derby is a yellow cheese with a firm texture similar to that of Cheddar. It is now less well-known than its colorful relative, Sage Derby. Mass-production of this product has led to the deterioration of the quality of most Sage Darby. But our Sage Derby is still the real thing. The coloring is done using spinach juice like most Sage Darby, but this dairy mixes actual chopped sage leaves into the cheese curd rather than mixing sage powder into the milk like most companies do. This results in a fresher sage flavor, and it is this flavor that lends Sage Derby its charm.

Sage Derby was one of the cheeses in a gift we had sent to our grandson & his lady. He raved about it so we ordered for ourselves. With its unique but not overbearing flavor, it's become one of our favorites! We included it on our cheese board for New Year's Eve & it was the hit of the night...completely gone!

I've had this twice; the first time, the sage part was very hard to discern; without the sage, I don't think that the cheese has much flavor. But the second time was very good -- the sage presence is delicate, but noticeable, so we've ordered it a third time. It's a very visually appealing cheese.

Hands down this is the best sage derby cheese I've found. Almost subtle, but not overpoweringly bold. Melts well; semi-firm, but not crumbly. HIGHLY RECOMMENDED!
