This is a savory, flavorful cheese that is very versatile. My favorite thing (after just eating it on a cracker) is to bake it into a savory cheese souffle. I use Julia Child's traditional recipe, but substitute sage derby for the swiss cheese, and I reduce the salt by half. The green color is actually quite attractive, and friends ask if I used fresh chives or other greens. No one every guesses what the cheese is, so you can bill it as your own secret recipe if you wish. :)It's also very convenient that the cheese as shipped from iGourmet.com is exactly the right amount for the recipe. But buy two, as you'll want to make it again right away.

I've had this twice; the first time, the sage part was very hard to discern; without the sage, I don't think that the cheese has much flavor. But the second time was very good -- the sage presence is delicate, but noticeable, so we've ordered it a third time. It's a very visually appealing cheese.

Hands down this is the best sage derby cheese I've found. Almost subtle, but not overpoweringly bold. Melts well; semi-firm, but not crumbly. HIGHLY RECOMMENDED!
