First made by the Cistercian Monks at Jervaulx Abbey in Wensleydale, using milk from their own herds, this cheese is now produced according to a time honored traditional recipe by the Wensleydale Creamery in Hawes, northwest of Yorkshire. Its full, creamy flavor offers a clean, lemony tang which tends to sharpen with age. Firm and flaky, but not by any means dry, this pasteurized cow's milk Wensleydale is fragrantly sweet and perfectly paired with fresh fruits such as pears, grapes, and apples.

This cheese has gained international attention through the popular English animation feature of Wallace & Gromit and their long lasting devotion to their favorite snack of Wensleydale with cream crackers. Wensleydale was one of my favorite English cheeses, and now this has been enhanced with a great smoky flavor. It does not overpower the original taste and could be described as a mild smokiness.
Best served with a nice dark, dessert beer!

I will admit the pros I have chosen may seem a bit contradictory, but this cheese has a very unusual texture with complex flavors. The cheese is quite firm; however, it is in no way dry and in fact has a moist feel to it. When tasting this cheese, you are immediately greeted by a smoky and tangy flavor. This gives way to a cool creamy flavor as you feel compelled to eat more. But, beware of the urge to eat the entire block because this is a very rich cheese.
