Hand made traditional Wensleydale cheese is made from milk drawn from cows grazing the sweet limestone pastures on surrounding farms in Upper Wensleydale. This gives the cheese the unique flavor for which it is renowned. The cheese is a fresh, young cheese taken at only three weeks old - it has a clean, mild, slightly sweet flavor with a honeyed aftertaste. The superb texture of fresh Wensleydale is perfectly complemented by the addition of the sweetness of succulent apricots to make this cheese a winner!

This cheese was sharper than I had imagined. The apricots -- which are usually a wonderful addition -- were more sour than I liked. Mediterranean apricots would had been a better additive. However, I never can get a cheese sharp enough to survive baked pasta -- and boy did this certainly filled that gap. I was not sure how the apricot flavor would blend in, but it was great. I also made a very cheesy/honey sweet cornbread, and I now cannot think of cornbread without the addition of this cheese.

The taste is excellent but it's hard to get slices for crackers because it crumbles into small pieces when you cut it.
