Berkswell sheep's milk cheese is handmade at 16th Century Ram Hall, situated on the edge of Berkswell village from where the cheese takes its name. Berkswell is five miles west of Coventry in England. This unpasteurized, hard cheese was developed from a traditional Caerphilly recipe, but adapted and matured for four to eight months to give it unique texture and flavor. Berkswell is close textured and has been described as 'silky', full, rich and sweet in flavor. It is frequently compared favorably with a mature Pecorino. The cheese is hard and chewy, almost granular. Each bite reveals more of its complex flavors -roasted nuts, caramelized onions and meadow flowers with prickly tang. It can be enjoyed on the cheese board or for grating and also in soups.

    I always bring two cheeses to Thanksgiving dinner (one always being your incredibly good Wensleydale with cranberries) and one new one. This year I brought the Berkswell and it was a hit! I am not one to describe cheeses with flowery adjectives and can only say this cheese was well enjoyed by a large number of "non-cheese people" with varied tastes.

    Three and a half stars. I'm confused by the description of the cheese having the flavor of roasted nuts and caramelized onions. I taste freshly cut grass -- lots and lots of freshly cut grass.

    This is a very good artisan cheese, I'm just a bit put off by the grassy flavor. Then again, grass is what cows are supposed to eat, not grain. Grass-fed beef is very expensive and it has nutritional properties (such as CLA) that are highly sought-after. So maybe this cheese has the superior nutritional properties of grass-fed beef.
