Imported from Italy and Romania, these buffalo are unaltered by genetic manipulation and still thrive without excessive antibiotics and high protein feeds. Instead, they feed on the grass and clover from the English countryside. Their milk is pure white and beautifully smooth - and full of natural goodness. I order this cheese in bulk whenever it's in stock! I have dairy allergies and find water buffalo milk is one of the few milks I can tolerate. I love I-Gourmet for providing other cheese dairy sources than just cow's milk.

Bishop's Blessing is similiar to cheddar - smooth with a bit of a tangy finish. I find it works well paired with other cheeses - a soft water buffalo or goat on pizzas, or alone with crackers.
