Long Clawson Dairy was founded in 1911 when 12 farmers from the Vale of Belvoir formed a co-operative to produce Stilton Cheese in the village of Long Clawson, Leicestershire. Clawson has prospered and today 56 producing members from 39 farms supply 38 million liters of milk per year.
White Stilton is made in the same way as Blue Stilton except that no blue mould is added to the milk. It is a young, close-textured, crumbly, and moist cheese with a very mild, fresh flavor - a very different taste from Blue Stilton.

I REALLY ENJOYED THIS CHEESE. IT DIDN'T HAVE THE SAME BITE AS A REGULAR BLUE CHEESE, MORE FIRM WITH A CREAMY TASTE. MADE A WORLD OF DIFFERENCE TO MY VEGIE SALAD. NOT TOO SALTY. VERY TASTY.

Comments about White Stilton:

White Stilton is a wonderful English cheese. If it is a good sample it has a fresh, almost citrus tang. It makes a great cheese to eat as a snack, perhaps with a nice white wine. It is very, very different to its more famous Blue cousin. There are perhaps two drawbacks to this cheese. One is that it is somewhat crumbly, although many cheese lovers will hopefully not object to it just because of that. The second drawback is that this cheese is so hard to find! I am delighted that igourmet has removed this second obstacle!
