This unique cheese is made in Herefordshire by Charles Martell of Laurel Farm, Gloucester. Hereford Hop's uniqueness derives from the fact that it is rubbed with ground, toasted hops, according to a medieval tradition. These are the same dried flowers used to lend the bitter flavor to beers and ales. The cheese itself is tender and buttery. The hops add a bitter aroma and flavor that is quite complementary. The rind is edible, although some prefer to discard it. The natural accompaniment for this cheese is, of course, a good English beer or ale. Suitable for Vegetarians.

I ordered this cheese for my restaurant, a beer-forward cuisine restaurant, so I thought this would be the perfect match for my cheese board. It was Boring with a capital "B". This cheese is flavorless, uninteresting, and generally useless.

Another great endeavor from Martell and Laurel Farm. In the tradition of the amazing Stinking Bishop, this artisinal cheese features a hearty bloom of "beery" hops in the finishing after-taste. The tangy bite of the grazed field offsets the slightly bitter hops. The robust and edible rind is excellent with/on a whole grain or rustic cracker or bread. Also excellent melted on same with hard "salami" type meats, fresh herbs, etc.
