Genuine Lancashire is a rare find nowadays. In 1939, there were 202 farms making Lancashire. Unfortunately, during the war and rationing, all milk was to be used only for the mass production of cheese. Today, there are only three farms making true Lancashire - all within the Preston area. Ruth Kirkham's Lancashire is exceptional. For the past 24 years, Ruth, her husband John, and son Graham have been running this small family business. For three generations the Kirkham family has used unpasteurized milk from their Fresian cows and adhered to traditional methods such as using the curd made one day and adding it to the previous day, then adding the next day's on top. This 3 day curd is the traditional method of creating Lancashire, as farmhouse cows were not bred for milk production and required three days to fill the mold. The curds are drained, salted and pressed and aged for six to twelve months. All cheeses are cloth bound and butter finished. This helps to develop the rind, which encapsulates the cheese's texture and taste. The taste starts with the tang of lemon zest, creme fraiche, and ends with a savory snap! They have won many awards for their cheese, the most prestigious being "Supreme Champion" at the International Cheeses Show at Earl's Court.

I chose this cheese based on the reviews and description with no previous experience with it. I found the flavor to be nice but the texture - rather a gummy crumble - to be so distracting that the complex flavor was lost. I'll either crumble it on salads or try melting it to use the rest of my supply.

Lancashire cheese has morphed over the years into a mass produced product with artificially brightened attributes of crumbliness and acidity all driven by supermarket price pressure. Mrs Kirkham's Lancashire cheese has not been subjected to such manufacturing and price pressures and as such retains it's true Lancashire heritage.

Mrs Kirkham's cheese is a fine representation of a true Lancashire cheese in that it isn't so crumbly that the slices immediately disintegrate and the signature acidic tang of a Lancashire is delivered subtely and with richness.

Now living in Switzerland, I was born and raised in Lancashire less than half a mile from the farm where this cheese is produced and it's very much my favourite Lancashire. Avoiding bias, there are some other very good Lancashire cheeses available from local low-volume producers if you are prepared to look.

An excellent representation of a Lancashire that is superb in salads and is to die for when piled into a toasted sandwich with thick-cut white bread and a couple of daubs of Branston pickle. Superb.

I first tried this cheese at the Windsor horse show. Fitting it was in the Queens back yard. I was born and raised in Lancashire, and this is about as good as it gets.

It's a very strong cheese, so you don't need as much to get the taste. Beats the pants off Cheddar....

This is without doubt the best-loved Lancashire cheese in Lancashire, so what's not to like? I grew up just a few miles from where it is made and whenever I go back it's the first thing I shop for.

Born in Lancashire before the war, I grew up on local cheeses. This one takes me back. Lancashire Lass is right not to recommend this as crumbly Lancashire. It is not. But neither is crumbly Lancashire, as sold today, a true farmhouse cheese. It, like it's cousin tangy Lancashire, is a generic mass-produced copy that is sold in every supermarket in England.

Bought by a Lancashire born person who loves cheese
This Lancashire was mild, not tasty, and the texture not quite crumbly enough.
