Blue Wensleydale is a delicacy fit for newcomers and connoisseurs alike. After maturing for six months, this cheese is exquisite. Inside the golden rind, a moist, close-textured, blue-veined cheese awaits discovery. Similar to Stilton but with a mellowed flavor. Blue Wensleydale has a rich creamy texture, and departs with a honeyed sweetness.

Traditional Wensleydale, while maturing in farmhouses throughout the dale during the late nineteenth and early 20th centuries, would have naturally blued. However, as cheese was produced on a factory scale in the mid 1900's and beyond, the white, crumbly variety, became fashionable and the blue variety became extinct in the dale.

However, Wensleydale Dairy has revived 'old fashioned' Wensleydale Blue cheese by emulating the classic recipes. Blue Wensleydale cheese is lightly pressed for only 24 hours before being bound in muslin fabric. It is then transferred to a humidified maturing room, akin to a farmhouse or monastery cellar: dark, cool, & moist. The cheese is turned regularly, pierced to facilitate blue mould evolution and matured for at least six weeks.

This cheese is more user-friendly..easier for guests to slice, doesn't stick to the knife as Stilton can.
We do enjoy the flavors of both Stilton and Wensleydale however.

A friend of mine at work and I love you try to different cheeses so I brought this cheese and some very mild crackers. Pretty soon, several other people arrived and needless to say...not a complaint in the group. It's mild, not the typical bang of a blue cheese. That said, it appeals to many. I would also use it to top a spinach salad with strawberries and a strawberry vinegarette. Lovely.

i feel well qualified to comment on this one as we regularly keep 4-6 blues at all times for our own personal cheese tastings (sadly, held almost daily). this blue may be the best of all. not too sharp, not too strong, it's just right. (rather like goldilocks)

We got both the Wensleydale and Maytag blue, to compare. We've loved the Maytag blue in the past, but this one is much nicer! Every mouthful is brimming with flavor, a sharp, blue-cheese bite. The texture is not too crumbly, but breaks when you bite it. Excellent!
