Slack Ma Girdle is the name of a cider apple native to England's mid-country. This robust-flavored cheese of the same name is created by Charles Martell, producer of Hereford Hop and the infamous Stinking Bishop. Although no apples are used in its production, its top and bottom are coated with dried nettle leaves, a natural herb that tastes like a cross between parsley and thyme. This cheese is very soft and sticky with an herbal, lemony flavor that owes some of its character to the nettles. Past this initial taste, Slack Ma Girdle has a big, bold flavor that matches its characteristic (and pervasive) aroma.

great taste but the smell is overpowering and the after taste seems to go off and then is unpleasing. easy to over eat and then suffer with the after taste.

This is an excellent cheese with lots of character. It has a strong, strong "aroma" which is why I say "not for the faint of heart." If you are new to washed rinds, this may not be the one to start with.

A great surprise! The nettle leaves and more tangy, brie type cheese are wonderful together, but may not be for the unadventurous.
