Located in: Cheese, England
Long known as "The King of Cheeses", Blue Stilton is one of a handful of British cheeses granted the status of a "protected designation origin" (PDO) by the European Commission. Only cheese produced in the three counties of Derbyshire, Leicestershire and Nottinghamshire and made according to a strict code may be called Stilton. There are just six dairies licensed to make Stilton, each being subject to regular audit by an independent inspection agency accredited to European Standard EN 45011.

To be called Stilton, a cheese must:

  • be made only in the three counties from local milk which is pasteurized before use.
  • be made only in a traditional cylindrical shape.
  • be allowed to form its own crust or coat.
  • be un-pressed.
  • have delicate blue veins radiating from the center.
  • have a taste profile typical of Stilton.
Made by the Long Clawson dairy, this product is perfect for snacking and as a part of the cheese course, but also is a wonderful cheese for salads and cooking.

What can you say that hasn't already been said about Stilton. This is a standard on every order we make from igourmet, one of our banker cheeses. We enjoy Stilton and crackers mid afternoon or after dinner with a nice hearty red wine or vintage Port as the perfect after dinner cheese. This cheese is salty,complex,tangy and everyone should at least have the opportunity to decide if it's for them. Very highly recommended, right up there as one of the three noblest cheeses.

This was my first blue cheese, and I was a little worried it might be too strong. That fear was quickly laid to rest with the first bite. Royal Blue has a complex, strong, but not overbearing personality. Served on Australian Water Wheels as an appetizer with a quality Belgian ale, it was flavorful, pungent (but in a good way) and satisfying. Definitely recommended.

Seriously, I have to wonder if either you guys got a bad batch of cheese and decided to ship it anyway, or if all these reviews are totally bogus. The cheese that I got was bitter and one dimensional. I love blue cheese, and I've never met a Stilton I didn't love...until I got this. Not salty, not creamy, not complex, not in any way....worth eating. The first notes were mild and really pretty boring, followed by a bitter and lingering aftertaste that was hard to lose. I had a few friends try it as well just to see if I was out of my mind - we all agreed - straight to the trash.

I've had stilton before supermarket stilton and I have to say from the first bite, this knocked my socks off. I enjoyed it with the Australian Panforte a chocolate item and my joy increased tenfold. I never though cheese and Chocolate could go so well together. I ate all of it in one day. Wish I could have done more with it, but it was to hard to resist it''s deliciousness.

Blue cheese I am use to is stronger than the Stilton. When I first opened the wrapper, I wasn't sure. But as the cheese had a chance to breathe, there was that "blueness", but more delicate than what I have had before. It is one to allow to stay on the tongue and notice the layers of flavor. Swallow to fast and you will miss it.

Allowing this cheese, or any cheese for that matter, to sit at room temperature for 30 minutes will only make it that much better.

This "King of Cheeses" is simply that. Royal Stilton pairs best with the classics: steak, port, and dried fruit.

As part of my annual Winter Solstice fete I offered my guests a generous 2 lb. wedge. I should have set some aside to dress a filet on Christmas. Maybe next year.

Royal Stilton is what I consider to be the classic veined cheese. The flavor is powerful but not overwhelming; creamy but not gooey;. and a great appetizer or dessert cheese. I prefer it with fruit: Crisp D'anjou Pears or Fuji Apples sliced thin and served fresh. Use your Stilton within a week or so of its arrival, as the cut pieces lose flavor and texture quickly once unwrapped. Quality can be extended with careful wrapping but avoid any moisture buildup as it ruins the cheese quickly.
